@Babybobgirl If you are sure that there is no egg yolk in your egg whites, and you make sure that there are no traces of fat on your beaters and bowl, then you really won’t need the cream of tartar. It’s really there to ensure stability of the whites. Also, if you use the white flour (all porpose flour) it will turn out the way it is in the recipe. You could opt for cake flour and adjust accordingly. Hope that helps!
